Description

This Bacon Mushroom Swiss Cheese Meatloaf is a next-level comfort food dish, featuring crispy bacon, earthy mushrooms, and gooey Swiss cheese. It’s easy to prepare and perfect for a hearty family dinner.

12 ounces raw bacon, chopped and divided
1 small white onion, chopped
5 button mushrooms, chopped
1 1/2 pounds extra-lean ground beef
1 egg
1/4 cup evaporated milk
6 ounces Swiss cheese, shredded and divided
1/2 cup cornflake crumbs


Instructions

  1. Preheat & Prep:
    Preheat your oven to 375°F (190°C). Line a baking sheet with foil or parchment paper.

  2. Cook the Bacon & Mushrooms:
    In a large skillet, cook half of the chopped bacon over medium heat until crispy. Remove and set aside. In the same pan, sauté the onions and mushrooms in the bacon grease until soft and fragrant (about 5 minutes).

  3. Mix It All Together:
    In a large bowl, combine:

    • Ground beef

    • Cooked mushrooms & onions

    • Crumbled bacon

    • Egg

    • Evaporated milk

    • Half of the Swiss cheese

    • Cornflake crumbs
      Mix until just combined—do not overmix.

  4. Shape & Top It Off:
    Form the mixture into a loaf shape on your prepared baking sheet. Sprinkle the remaining Swiss cheese on top, then scatter the rest of the uncooked bacon over everything.

  5. Bake to Perfection:
    Bake for 45-50 minutes, or until the internal temperature reaches 160°F (71°C). Let it rest for 5 minutes before slicing.

  6. Serve & Enjoy:
    Serve with mashed potatoes, roasted vegetables, or a side salad. Optionally, sprinkle extra Swiss cheese on top before serving.

Notes

Use fresh Swiss cheese for the best melt.
If you like extra crispy bacon, cook it separately and sprinkle it on in the last 10 minutes of baking.
For mushroom haters, blend them into a paste to keep the flavor without the texture.
Let the meatloaf rest for at least 5 minutes before slicing to retain moisture.
