This Black Pepper Chicken with Mushrooms is a quick, bold-flavored dish made with tender chicken, savory mushrooms, and a glossy soy-oyster sauce. Perfect for weeknight dinners when you want comfort food without the fuss.
Ingredients
• 2 boneless, skinless chicken breasts, sliced
• 1 tablespoon cornstarch
• 1 teaspoon salt
• ½ teaspoon black pepper
• 2 tablespoons vegetable oil
• 1 onion, chopped
• 2 cups mushrooms, sliced
• 3 cloves garlic, minced
• 2 tablespoons soy sauce
• 1 tablespoon oyster sauce
• 1 teaspoon sesame oil
• ¼ cup water
• Freshly ground black pepper, to taste
• Green onions for garnish (optional)
Instructions
1. In a bowl, toss the sliced chicken with cornstarch, salt, and black pepper.
2. Heat vegetable oil in a large skillet over medium heat. Add the chicken and cook for 4-5 minutes, until lightly golden.
3. Push the chicken to the side of the skillet. Add chopped onions, sliced mushrooms, and minced garlic. Sauté for about 6 minutes until fragrant and soft.
4. In a small bowl, mix soy sauce, oyster sauce, sesame oil, and water. Pour the mixture into the skillet and stir gently to coat everything. Add a generous grind of black pepper.
5. Serve hot over steamed rice or noodles. Garnish with green onions if desired.
Notes
• This dish also works well in a slow cooker—just brown the chicken first, then cook everything on low for 4 hours.
• No oyster sauce? Hoisin or teriyaki make great substitutes.
• Add chili flakes or sriracha for extra heat.
