Ingredients

For the Chicken:

  • 2 lbs chicken wings (about 12–14 wings)

For the Batter:

  • 1½ cups all-purpose flour

  • ¾ cup cornstarch

  • 8 oz unsalted butter (1 stick)

  • 1 tbsp lemon pepper seasoning (plus extra for garnish)

  • Juice of ½ lemon

  • Zest of ½ lemon

For Frying:

  • 6–8 cups neutral oil (canola, vegetable, or peanut oil)


Instructions

1. Marinate the Chicken
In a large bowl, toss wings with mustard, hot sauce, salt, paprika, and garlic powder. Massage the mix into the wings thoroughly. Let marinate for at least 30 minutes or up to 2 hours.

2. Prepare the Batter
Whisk together flour, cornstarch, salt, and paprika in a separate bowl.

3. Heat Up the Oil
In a deep pot or Dutch oven, heat oil to 350°F. Use a thermometer for best accuracy.

4. Dredge and Fry
Toss marinated wings in the flour mixture to coat. Shake off the excess and fry in batches for 10–12 minutes, turning occasionally, until golden and crispy.

5. Make the Lemon Pepper Sauce
While wings fry, melt butter in a saucepan. Stir in lemon juice, zest, and lemon pepper seasoning. Keep warm.

6. Sauce and Serve
